1) Cornflake chicken nuggets


Add the crunch to your regular chicken nuggets with cornflakes.


  • 24 oz boneless chick breast trimmed of all fat
  • 2 egg whites
  • 3 cups cornflakes
  • 1 tsp black pepper
  • Salt as per taste
  • Olive oil


1) Cut the chicken into small pieces.

2) Beat the egg whites in a large bowl with about a tsp of salt.

3) Crush the cornflakes and put them in a large ziplock bag and toss them with salt and pepper.

4) Coat the chicken pieces with the egg white mixture.

5) Mix the chicken with the crushed cornflakes and coat them evenly.

6) Spray olive oil on a cookie sheet and arrange the chicken pieces on it. Brush some oil on the chicken as well.

7) Bake the chicken on 400 degrees in the oven for about 15 minutes till the chicken is cooked properly.

8) Serve with your favourite dip.

2) Cornflake muffins


These delicious muffins don’t take too much of time and are a comparatively healthy way to eat muffins.


  • 1/2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup sugar
  • 2 cups cornflakes, slightly crushed (not frosted flakes)
  • 1 1/4 cups milk
  • 1/2 teaspoon vanilla (optional)
  • 1 egg
  • 1/3 cup vegetable oil


1) Mix the flour, baking powder, salt and sugar together and keep it aside.

2) Combine crushed cornflakes and milk in a large mixing bowl.

3) Let it stand for about 2 minutes or until cereal is slightly softened. Don’t let the cornflakes get completely soggy.

4) Add the egg, oil and beat well. Stir in vanilla.

5) Add the flour mixture and keep stirring till it gets mixed properly.

6) Portion batter evenly into 12 greased 2 1/2-inch muffin pan cups.

7) Bake at 400° about 20 minutes or until lightly browned. Serve warm.

3) Cheesy cornflakes


Add cheese to your cornflakes instead of milk and see how it transforms into a lip-smacking delight.


  • 1 cup cornflakes
  • 1/4 cup roasted peanuts
  • 2 tbsp grated processed cheese
  • 1/4 tsp chilli powder
  • 1/2 tsp Worcestershire sauce
  • 1 tsp butter
  • Salt to taste


1) Mix the butter and peanuts in a microwave-safe bowl and microwave on high for 30 seconds.

2) Add all the other ingredients, mix well and microwave on high for 1 more minute.

3) Cool completely and store in an air-tight container.

4) Cornflakes hara kabab


‘Hara’ translates to green. These kababs are usually made of green peas and here we’re enhancing the taste by adding cornflakes to give it a little extra crunch.


  • 1 cup grated paneer
  • 1 cup boiled green peas
  • 1 cup boiled and crushed sweet corn
  • 1/2 cup boiled, peeled and mashed potatoes
  • 1/2 tsp cardamom (elaichi) powder
  • 1 tbsp cornflour mixed in 1/2 cup of water
  • 1/4 cup crushed cornflakes for coating
  • 1 tbsp oil for cooking
  • Salt to taste


1) Mix the paneer, green peas, corn, potatoes, cardamom powder and salt in a bowl.

2) Divide the mixture into 16 equal portions and shape each portion into a round-shaped kebab. Keep aside.

3) Dip the kebabs in the cornflour mixture and roll them in cornflakes. Coat the kababs evenly.

4) Cook each kebab on a hot non-stick tawa (griddle) on a medium flame, using 1/8 tsp of oil, till both sides are golden brown in colour from both sides. Drain on an absorbent paper and serve hot.

5) Healthy cornflakes chivda


Out of munchies? Prepare this simple yet healthy snack at home without much effort.


  • 2 tablespoons oil
  • 1⁄2 teaspoon cumin seed
  • 1⁄2 cup shelled peanuts or 1⁄2 cup mixed nuts, of your choice
  • 1⁄4 cup golden raisin
  • 1 teaspoon red chilli powder (to taste)
  • 1⁄3 teaspoon turmeric powder
  • Kosher salt to taste
  • 1⁄2 teaspoon sugar
  • 1 teaspoon lime juice
  • 3 cups cornflakes


1) Heat oil in a pan and add the cumin seeds. Once they start spluttering, toss in the raisins (or other dried fruits) and nuts. Stir for a minute.

2) Keep on very low heat and add the chilli powder, turmeric powder, salt and sugar.

3) Add the lime juice.

4) Finally, gently fold in the cornflakes over low heat for about 3-4 minutes until the cornflakes are well coated with the spice blend. Cool completely before storing in an airtight container at room temperature.
